Sweet Smoked Pork Ribs

Ingredients

  • Baby back pork ribs (2 racks)

  • Constitution – Sweet & Smoky seasoning

  • Honey (approximately 1/3 cup)

  • Butter, squeezable (approximately 1/3 cup)

  • Apple juice, Coke, or Dr Pepper (1/4 cup)

Directions

  1. Apply Constitution seasoning generously on all sides of each rack. Both sides should be covered in an even coating.

  2. Wrap the ribs in plastic and place in the refrigerator for 1 to 20 hours as time permits (the longer the better!).

  3. Remove ribs from the fridge and from the plastic. Let them sit at room temperature for 30 minutes.

  4. Bring the smoker to 225F.

  5. Place ribs in the smoker. They can touch, but do not stack.

  6. Smoke the ribs at 225F for 2 hours.

  7. After 2 hours, increase the smoker’s temperature to 275F.

  8. For each rack, place 3 large beads of honey and 3 large beads of butter on a thick sheet of foil (or butcher paper). Pour in a small amount (approximately 1/8 to 1/4 cup) of juice (or Coke, Dr. Pepper, etc.), along with extra Constitution seasoning.

  9. Lay the top side of each rack face down into the mixture, and wrap the foil around so the mixture won’t leak.

  10. Place each rack back in the smoker with the top side facing up, and cook until an internal temperature of 195F (approx 2 hours).

  11. Serve and enjoy!
